Pandan chiffon cake is one of my personal favourite after moving to Singapore. It is a light and fluffy cake that is popular in Southeast Asian countries such as Indonesia, Malaysia, and Singapore. It is made with a mixture of egg yolks, sugar, coconut milk, and pandan extract, which gives the cake its distinct green color and fragrant aroma.
The egg whites are whipped to soft peaks and folded into the batter, which gives the cake its characteristic spongy and airy texture. Pandan chiffon cake is usually served as a dessert or snack, and it is often enjoyed with a cup of tea or coffee.
